Non-starch polysaccharides (NSP) are determined in some foods by the Southgate and Englyst methods. The food choice (legumes, vegetables, dietetic foods) was made in regard to their common use. With total non-starch polysaccharides (T-NSP) total non-cellulosic polysaccharides (T-NCP) and cellulose a rather good agreement was observed between these two methods with the exception of few cases. Uronic acid fraction presents some differences. Differences revealed for pentoses, as a whole, are generally lower than exoses. Of course the comparison between these methods is not possible for single pentoses and exoses, since Southgate method does not allow that. It is worth emphasizing that the evaluation of results obtained may assume different meanings according to a strict analytical or practical nutritional approach and also according to the total amount of dietary fiber and its different fractions.
