Study on the effect of corn powder size and the concentration of sodium hydroxide on the quality of corn starch (Zea mays L.) using dry process

Corn starch was produced using different size of corn grit and different concentration of sodium hydroxide. The results show that the concentration of sodium hydroxide produced high yield of corn starch, the fiber content in corn starch also reduced using low concentration of sodium hydroxide. The content of starch, ash and fiber in the product is in the range of high quality of tapioka starch.
