Extraction of cichory

We present results of measurements of chicory basic extraction characteristics, including the type of solvent, ratio solid/liquid, time and temperature of extraction, where we evaluated the quality of obtained extracts, focused on contents of inulin, bitter compounds and colour. The measurements were performed with the goal to find an extraction system that enables to obtain relative pure extracts of inulin or bitter compounds from dried chicory roots.
