Production of Zabadi, from ultrafiltered Buffalo's milk

The ultrafiltration method was used to concentrate buffalo milk for use in making yoghurt (zabadi). The degree of concentration and incubation time were varied to study the effect on the pH, protein content and the sensory quality of the yoghurt.
