Composition of a byproduct of wild rice processing

A light fraction is produced by an airstream separator used to collect mature grain from freshly harvested wild rice. The light fraction is currently discarded, but its chemical composition and amino acid composition were investigated to determine potential usefulness as a food ingredient. The fraction has a protein content of approx. 12% and contains 5-6% ash. Amino acid composition is tabulated; of the essential amino acids only lysine is below the FAO reference pattern (4.7-5 vs. 5.5 g/100 g protein). The fraction may have value as a food ingredient, but requires feeding studies.
