Effect of wheat bran on zinc absorption

A randomized study of the effect of dietary fiber (wheat bran) on zinc (Zn) absorption in 23 male adult volunteers using a Zn tolerance test (ZTT) and whole-body measurements of retention of an oral Zn-65 dose over a 7-day period revealed that dietary wheat bran significantly reduces Zn absorption and offers a potential Zn deficiency risk. The study also demonstrates that a modified form of ZTT using a considerably low dose can be used as a test of Zn absorption. It is concluded that long-term wheat bran use may well prove detrimental to the Zn status of some patients. (wz)
