Conținutul și cantitatea de substanțe nutritive acumulate în fructele de mur

The paper presents the results of research on the biochemical analysis of blackberry fruits of the Darrow, Arapaho, Smoothstem and Thornfree varieties during the years 2020–2022. The research was carried out in the „Fertilization, Physiology and Biochemistry” laboratory of the Scientific-Practical Institute of Horticulture and Food Technologies. Depending on the variety, the climatic conditions of the year, the amount of dry substances in the fruits, varied between 12.0–13.93%; of sugars between 3.76–-9.20%; tanning and coloring substances between 45.73–137.18 mg%; vitamin C between 17.60–38.28 mg%. In the year 2022, the acidity values become higher in the Darrow variety – 38.28% compared tot he year 2020 with a content of 20.7%. The sugar/acid ratio established in the blackberry varieties studied varied between 1.9 (Smoothstem variety) and 5.7 (Darrow variety).
