Bu çalışmada TR22 Bölgesi’nde 2017-18 üretim yılında bölgedeki yağlık zeytin üreten, işleyen ve aracı işletmeler incelenmiştir. Yapılan çalışma sonucunda araştırma bölgesinde yağlık dane zeytin ve zeytinyağında yağhaneler, zeytinyağı fabrikaları, tüccarlar, perakendeciler, TARİŞ ve nihai tüketiciler pazarlama kanallarını oluşturduğu bulunmuştur. Yağlık dane zeytinin hasat sonrası işleme merkezlerinde yığılmalar sonucunda beklemesi, yağlık dane zeytin nakliyesinde çuval kullanımı, dip zeytinlerin dalından koparılanlarla karıştırılması ve hasatta sırık kullanımının etkinliği azaltan faktörler olarak bulunmuştur. Zeytin hamuru sıcaklığının optimum seviyenin üzerine çıkarılması, malaksör makinesinin kapağının yoğurma sırasında açılması ve üç fazlı ve klasik sistemlerin kullanılması sonucu karasu sorununun ortaya çıkmasının işleme hizmetinde pazarlama etkinliğini azaltan faktörler olduğu bulunmuştur. Aracıların yağlık dane zeytinde pazarlama marjı %1,64, zeytinyağında tüccarların %20,00, fabrikaların %14,06 ve perakendecilerin %22,58 marjı olduğu bulunmuştur. Perakende fiyatları içinde üretici fiyatlarının farkı ise zeytinyağında %51,16 olarak bulunmuştur.

Teknolojinin gelişmesine ayak uyduramayan küçük aile işletmelerinin, rekabet piyasasındaki mevcut konumlarını korumak ve etkinlik paylarını artırmak önemli bir konudur. Küçük aile işletmeleri gıda üretimin yaklaşık %80’ini karşılamakta ve bu işletmelerin piyasadan çekilmesi gıda arzında ani düşüşe sebep olabilmektedir. Bu çalışmanın amacı küçük aile işletmelerine pazarlama eğitimi sağlanmasının, çiftçilerin becerilerini, üretimi ve karlılığı nasıl artırabileceğini göstermektir. Bu beklentilerin gerçekleşmesi büyük işletmelerin ya da kamunun sağlayacağı desteklerle mümkün olabilecektir. Bu çalışmada oyun teorisi kullanılarak, iki oyuncu (Proje kurucu ve çiftçi) arasında gerçekleşen olası stratejiler dikkate alınmış ve her aşamada elde edilecek kazançlar bulunmuştur. Sonuç olarak, yatırımı yapan kuruluş ile eğitimi alan çiftçinin iş birliği yapması, kazancı artıracağı sonucuna varılmıştır. Bu sonuç güven duygusu, iş birliği ve örgütlenmenin temelini oluşturmaktadır. Böylece üretim artarken, kalifiye eleman eksiği azalacak ve istihdama katkı sağlanacaktır. Ayrıca teknoloji kaynaklı pazarlama sorunlarının aşılmasına da katkı sağlayacaktır.

Tokat, which is located between the Black Sea Region and the Central Anatolia Region and has a transition climate, is one of the provinces with high agricultural potential. This potential also provides important advantages in terms of vegetable agriculture. In Tokat, where the vegetable cultivation dates back to many years, many types of vegetables can be grown. While the farmers engaged in vegetable cultivation until the beginning of the 2000s were satisfied with their situation, in the last 15 years, growers have started to turn to alternative products due to the decrease in quality, productivity and profitability. There are significant difficulties and decreases in competitiveness of vegetable farming in the field and greenhouse cultivation. In the study, strengths, weaknesses, opportunities and threats of vegetable cultivation of Tokat were analysed. Solutions for the improvement of vegetable cultivation have been discussed by making determinations.

Günümüzde kesme çiçek gelir getiren bir faaliyet kolu haline gelmiştir. Dünya’da 2014 yılında 609.000 ha alanda kesme çiçek üretimi yapılmakta ve süs bitkileri üretim alanının %39’unu oluşturmaktadır. Kesme çiçek üretiminde Asya Pasifik, Amerika kıtaları öncelikli kıtalar, ABD, Japonya, İtalya, Hollanda, Ekvator, Kolombiya, Kenya öncelikli ülkelerdir. Avrupa Kıtası Dünya toplam ihracatının %63’üne Amerika kıtası %29’una hâkimdir. En çok Kesme çiçek ihracatı yapan ülkeler Hollanda (%56), Kolombiya (%17), Ekvator’dur (%11). En çok kesme çiçek ithal eden ülkeler ABD (%18), Almanya (%15), Hollanda’dır (%14). Türkiye’de süs bitkileri üretimi yapılan alanların %26’sında kesme çiçek üretilmektedir. 2016 yılı TÜİK verilerine göre; kesme çiçek üretimi toplamda 1.195 hektarlık alanda yapılmaktadır. Kesme çiçek üretiminin süs bitkileri içerisindeki payı %68’in üzerindedir. Kesme çiçek üretiminde Akdeniz bölgesi %46’lık pay ve 5.095 da ile en fazla kesme çiçek üretim alanına sahiptir. Türkiye coğrafi konumu ve iklim özellikleri bakımından kesme çiçek üretiminde geniş imkânlara sahip ülkeler arasında yer almaktadır. Kesme çiçek üretiminde ekim alanı olarak ilk sırayı İzmir (%41,25) almaktadır. Türkiye’nin süs bitkileri ihracatı 81,5 milyon ABD dolarına yükselmiş ve dünyada bu değerle 26.sırada yer almıştır. Ürün grupları içerisinde %34 oranla en fazla ihracat 27,7milyon ABD dolarıyla kesme çiçeklere aittir. En fazla ihracat yapılan ülke Hollanda’dır (%19,29). Türkiye’de kesme çiçekler arasında en fazla üretimi ve ihracatı yapılan çiçek karanfildir. Kesme çiçek sektörü gelişmeye açık bir sektördür. Bu nedenle ticarette pazar istekleri doğrultusunda hareket etmek ve ürün çeşitliliğine gitmek sektörün gelişimine faydalı olacaktır.

Turkey has almost 70% of world hazelnut production and 80% of hazelnut export. Ordu has the privilege of being the city which has the greatest area with hazelnut by supplying the 33.7% of hazelnut production. The income source of 70% of the people in Ordu is hazelnut and for this city, hazelnut is not only an agricultural product, it is also a national asset. There are 40 hazelnut processing plants with an internal capacity of 350.000 tons annually. 32.5% of these plants are in Ordu. When the top 20 Black Sea Hazelnut and Products Exporters Union member firms with the highest hazelnut export in 2016 were analyzed, it was found that 7 of these firms are in Ordu. These 7 firms in Ordu cover the 11.84% of the total hazelnut export value, which is 1.981.334.911$ for 2016. The purpose of this study which will be discussed within this context is to analyze and show the current states of hazelnut processing plants in Ordu in terms of product processing, quality assurance and standards and marketing. The data obtained as a result of the study will be used to find out the tendencies of the plants in the coming years. Because of this, the study is important in terms of researching the obstacles in increasing the export shares of hazelnut, which is one of the most important export products of Turkey economy. For this purpose, a face-to-face questionnaire was conducted with the managers and authorities of 12 hazelnut processing plants in Ordu. It is expected that the information presented within the context of the study will develop the hazelnut processing industry and will lead the related people researching in this field.

The study’s main purpose is to to determine the price levels in the market and their willingness to accept higher prices of organic farming enterprises. For this purpose, enterprises engaged in organic farming activities in Konya were interviewed. A total of 883 organic farming enterprises in Konya grow 123 kinds of organic products, and as the products change, the organic structures of agricultural products change and their marketing channels, strategies and price formations also differ. In this context, 219 surveys were conducted in 13 product groups classified by TURKSTAT. In line with the data obtained as a result of the survey, the social, economic, production and marketing characteristics of the organic farming enterprises and the effects of the marketing structures of organic products on their willingness to accept prices were investigated using the Willingness to Accept (WTA) method, which is one of the conditional valuation methods. Furthermore, the marginal effects of each factor were determined by constructing the equation of the ordinal probit regression to be used to estimate the function of the WTA curve. As a result, suggestions have been developed for optimal price formation in the organic agriculture sector, where the marginal benefit is at the forefront, due to the high level of healthy life and environmental awareness, as well as marginal income, unlike traditional agricultural enterprises.

The commercial production of cultivated-mushroom, which has a forty years of past in Turkey, was started after 1980s. Until the recent decade, most of the total amount of production in Turkey was performed by family members while the cultivation of the product has gained an upward trend since the beginning of 2000s, though the amount and development rate were not enough. During that time, a number of large (>2000 m2) and medium (500-2000 m2) scale mushroom production facilities were established and Turkey has gained an important place in mushroom production in the world. In this study, we aimed to reveal the common production methods of ten medium and large scale mushroom companies whose daily production capacities are above 1 ton in six regions. In this respect, all companies have been visited and communicated directly with company representatives and a survey comprising 65 questions about company, production facility, compost and casing soil, production systems, diseases and pests and packaging was made. The findings have suggested us that such companies have mostly a history of 15 years of time and have a land size of 10-50 thousand m2, while their mushroom production areas vary between in size and that they make use of technology in production and automation in their plants and they have quality management systems (ITU, ISO 9001, ISO 22000 and Global Gap ) and they employ generally qualified and experienced technicians or agriculture engineers and also that 40% of them receive consultancy and also that they use their own productions or standard ready mycelium planted compost and that they use domestic peat as casing material and that they package the mushrooms with their brands and sell to markets mostly and lastly that they conduct pre-sale quality sorting and grading. It was also seen that there is lack of food engineers employed and most of the companies do not receive consultancy, and that the waste compost is not evaluated correctly and that the covering material is not in the required standards and that there are even companies not doing any water analysis and that coal for heating and chemicals for disinfection are used and that diseases and pests are inevitable and last that they lack in processing different products.

Mushroom production that started in 1960's in Turkey gained economic value from the 1990's and it started improving as a commercial sector after that time. While Turkey mushroom production was 80 tons in 1973, it increased up to 45.000 tons in 2014. There is a rapid changes and improvement in cultivated mushroom production and consumption in Turkey. The object of the study is to reveal current status of mushroom production in the world and Turkey, and the problems of the mushroom sector in Turkey and the necessary precautions and ways to solve these problems. The data obtained from the inspections of the mushroom enterprises that in mushroom production regions of Turkey, and the secondary data obtained from Food and Agriculture Organization of the United Nations (FAO), Turkish Statistical Institute (TUIK) and Union of Antalya Exporters (AIB) and also national and international publication’ data has been used in this study. In Turkey, Mediterranean and Marmara Regions rank first in mushroom production and consumption with the share of 61.5 and 40%, respectively. It has been determined that big enterprises producing mushroom and compost established in the Central Anatolia in this study. The number of enterprises producing mushroom by using technology increases and 15-20% of the total production are provided by the big enterprises having 2000 m2 and over mushroom production areas. Recent years, there are serious increases in the production of different mushroom species such as especially Pleurotus ostreatus. In addition, precision agriculture applications are widespread with the time. For the continuation of growth of the mushroom sector in Turkey and the solving of the sector problems, there are needs both in making the necessary changes in legislation and to be given priority researches related to mushroom production in university and public research institutions and also to support them.
