Sunflower requires a sufficient amount of nutrients for growth and development. Therefore, it is important to determine the impact of sunflower cultivation on the soil nutrient regime, taking into account the frequency of its return to the previous place. The aim of the study was to determine the influence of the share of sunflower in short rotation crop rotations on the soil nutrient regime. The research was conducted at the experimental field of the Kharkiv V.V. Dokuchaev National Agrarian University, which is located in the Left-Bank Forest-Steppe of Ukraine. The research and accounting were carried out on typical heavy loamy chernozem in accordance with generally accepted methods. The experimental scheme included five-field crop rotations with sunflower saturation of 0, 20, 40 and 60%. The research results show that an increase in the share of sunflower in short rotation crop rotations does not lead to a deterioration in the nutrient regime of the topsoil. There was no significant difference between the variants in the content of nutrients. The most supplied with nutrients was the topsoil in the control variant (crop rotation without sunflower). With an increase in the share of sunflower in crop rotations, the amount of nutrients in the tilth layer of soil decreased slightly. Regardless of the studied crop rotation options, the availability of easily hydrolysable nitrogen was low, mobile phosphorus was average, and exchangeable potassium was high. Increasing the share of sunflower in short rotation crop rotations led to a decrease in the yield of the crop itself. The yield of sunflower seeds was at the same level in the variants with 20 and 40%. There is a close relationship between sunflower yield and its saturation, which significantly depends on the soil nutrient regime. The yield level is most affected by the content of phosphorus and potassium in the topsoil. The correlation is 0.91 and 0.98, respectively. The practical value of this study is due to the possibility of using the obtained results to justify the feasibility of increasing the share of sunflower in the structure of crop rotations | Для росту і розвитку соняшнику необхідна достатня кількість поживних речовин. Тому встановлення впливу вирощування соняшнику на поживний режим ґрунту, з урахуванням частоти його повернення на попереднє місце є актуальним. Метою роботи було визначити вплив частки соняшнику у короткоротаційних сівозмінах на поживний режим ґрунту. Дослідження проводилися на дослідному полі Харківського національного аграрного університету ім. В.В. Докучаєва, яке розташоване в Лівобережному Лісостепу України. Дослідження та обліки були проведені на чорноземі типову важкосуглинковому згідно загальноприйнятих методик. Схема досліду передбачала п’ятипільні сівозміни із насиченням соняшнику 0, 20, 40 і 60 %. Результати досліджень свідчать, що збільшення частки соняшнику в короткоротаційних сівозмінах не призводить до погіршення поживного режиму орного шару ґрунту. Не виявлено суттєвої різниця між варіантами у вмісті елементів живлення. Найбільш забезпеченим поживними елементами був орний шар ґрунту у контрольному варіанті (сівозміна без соняшнику). З підвищенням частки соняшнику у сівозмінах, кількість елементів живлення в орному шарі ґрунту дещо знижувалася. Незалежно від досліджуваних варіантів сівозмін, забезпеченість легкогідролізним азотом була низькою, рухомим фосфором – середньою, обмінним калієм – підвищеною. Збільшення частки соняшнику в короткоротаційних сівозмінах призвело до зниження врожайності самої культури. Урожайність насіння соняшнику знаходилася на одному рівні у варіантах із частками 20 % та 40 %. Відмічено тісний зв’язок між урожайністю соняшнику та його насиченням, що значно залежить від поживного режиму ґрунту. Найбільше на рівень врожаю впливає вміст в орному шарі ґрунту фосфору та калію. При цьому кореляційний зв’язок становить 0,91 та 0,98 відповідно. Практична цінність цього дослідження обумовлена можливістю використовувати отримані результати під час обґрунтування доцільності збільшення частки соняшнику у структурі сівозмін

The problems of providing consumers with healthy nutrition in sufficient quantities are typical for the entire modern world, and specialists are working hard to solve them, trying to harmonize the priorities of nutritional value with the basics of thrifty use of food resources. In this regard, it is important to develop functional food products, the composition and production technology of which rationally correspond to the nutritional needs of certain categories of consumers. The purpose of the article is to substantiate the use of the indicated vegetable raw materials in functional pâté products and to determine the quantitative parameters of their inclusion in formulations. To study the swelling and hydration of the samples, conventional laboratory methods were used, the water-retaining and fat-retaining capacities were determined by the Schoch method, the amino acid composition – by using the High-Performance Liquid Chromatography. The research has confirmed the feasibility of using plant flour and oils as sources of protein and fat to impart functional properties to meat products and to save valuable meat raw materials. Studies of the physical, chemical and functional-technological properties of flaxseed, rice, corn, sunflower flour showed that flaxseed and rice flour are the most suitable for creating formulations of functional meat products. The determination of the amino acid composition of these two types of flour showed a higher content of essential amino acids, including lysine, in flaxseed flour, which is very valuable for ensuring the proper functioning of the child's brain. For the rational conduct of research, a generalized scheme for planning formulations of functional pâté products was proposed, based on the properties of the used plant materials and the desired functional properties of these products. У зв'язку з цим важливого значення набуває розробка функціональних харчових продуктів, склад і технологія виробництва яких раціонально відповідають харчовим потребам окремих категорій споживачів. Мета статті – обґрунтувати використання рослинної сировини у функціональних паштетних виробах та визначити кількісні параметри її долучення до рецептур. Для дослідження набухання та гідратації зразків було використано загальноприйняті лабораторні методи, водоутримуючу та жироутримуючу здатність було визначено за методом Шоха, амінокислотний склад – за допомогою високоефективної рідинної хроматографії. Проведені дослідження підтвердили доцільність використання рослинного борошна та олій як джерел білка та жиру для надання функціональних властивостей м'ясним виробам та економії цінної м'ясної сировини. Дослідження фізико-хімічних та функціонально-технологічних властивостей лляного, рисового, кукурудзяного, соняшникового борошна показали, що лляне та рисове борошно є найбільш придатними для створення рецептур функціональних м'ясних продуктів. Визначання амінокислотного складу цих двох видів борошна показало вищий вміст незамінних амінокислот, зокрема лізину, у лляному борошні, що є дуже цінним для забезпечення належного функціонування дитячого мозку. Для раціонального проведення досліджень запропоновано узагальнену схему планування рецептур функціональних паштетних виробів, виходячи з властивостей використаної рослинної сировини та бажаних функціональних властивостей цих виробів. Currently, the issue of preserving organic matter, which is increasingly being replaced by synthetic alternatives, is relevant and expedient. But these substitutes are alarming because of their possible threat of dangerous after-effects, because the human body generally consists of what it consumes in everyday food. All chemical elements undesirable for the body that can cause the appearance of diseases and health complications fall under the category of dangerous food. In view of this, in order to preserve the volume of production of natural food products, there is a need to increase the share of leguminous crops. In addition to the positive effect on soil fertility, legumes are naturally filled with biologically pure nitrogen. Also, this crop has a higher content of valuable plant protein compared to cereal grain crops. In order to increase the production of pea grain, it is necessary to use high-yielding varieties of the moustached morphological type. The purpose of the article is to identify the influence of sowing dates and treatment of vegetable pea seeds with molybdenum and boron fertilizers on plant development indicators in the conditions of Southern Ukraine. The research used the laboratory method, as well as the methods of field experiment and phenological observation. It was established that the effect of boron and molybdenum delays the onset of the phenological phases of crop development, and the use of two different sowing times allows to delay the onset of the technological maturity phase by 6 days. This is important during harvesting for minimal losses of the vegetable pea crop. The practical value of the results lies in the application of combinations of molybdenum and boron fertilizers to increase the yield and nutritional value of leguminous crops | Наразі актуальним та доцільним є питання збереження органічної речовини, на заміну якої усе частіше приходять синтетичні альтернативи. Але ці замінники насторожують своєю можливою загрозою небезпечності післядії, адже організм людини взагалі складається з того, що вона споживає у повсякденну їжу. Під видом небезпечної їжі потрапляють і всі небажані для організму хімічні елементи, що можуть спричинити появу хвороб та ускладнень здоров’я. З огляду на це, з метою збереження об’ємів виробництва натуральних харчових продуктів постає необхідність розширення частки зернобобових культур. Окрім позитивного впливу на родючість ґрунтів, бобовим властиво наповнюватися біологічно чистим азотом. Також ця культура має вищий вміст цінного рослинного білка у порівнянні із злаковими колосовими культурами. Задля збільшення виробництва зерна гороху потрібно використовувати високопродуктивні сорти вусатого морфологічного типу. Метою статті є виявлення впливу строків сівби та обробки насіння гороху овочевого молібденовим і борним добривами на показники розвитку рослин в умовах Півдня України. У дослідженні застосовувалися лабораторний метод, а також методи польового досліду та фенологічного спостереження. Встановлено, що дія бору та молібдену затримує настання фенологічних фаз розвитку культури, а застосування двох різних строків сівби дозволяє затримати настання фази технологічної стиглості на 6 діб. Це важливо при збиранні для мінімальних втрат врожаю гороху овочевого. Практична цінність результатів полягає у застосуванні комбінацій молібденових та борних добрив для підвищення врожайності та поживної цінності зернобобових культур

Annually, soil fertility indicators decrease in Ukraine. Therefore, to ensure a deficit-free soil balance, it is necessary to attract additional reserves of organic raw materials, in particular, post-harvest residues of agricultural crops, and to use biological preparations for their destructuring. To date, the effect of stubble biodestructors on the processes of mineralization of post-harvest plant residues has not yet been fully studied, especially under different methods of main tillage, therefore the purpose of our study was to determine the influence of the destructor Ecostern Classic and the method of main tillage on its nutritional regime in the conditions of southern Ukraine. Research methods: field, laboratory. Research has established that the amount of nitrates, mobile phosphorus and exchangeable potassium that remained on average over the years of research in the soil of the experimental site after harvesting winter wheat was 6.3, respectively; 47.5 and 208.8 mg/kg of soil, and after harvesting winter barley – 5.9; 42.8 and 202.4 mg/kg of soil. After partial mineralization of plant residues of winter crops, in three months, the content of nutrients in the soil increased, especially when treated with the Ecostern Classic biodestroyer. It was determined that the use of plowing contributed to the acceleration of the mineralization of plant residues of winter wheat and the greater accumulation of nutrients in the soil. Thus, during the treatment of post-harvest remains of winter wheat with a biodestructor using plowing, 11.3 mg/kg of soil nitrates, 53.9 mg/ kg of soil of mobile phosphorus and 261.8 mg/kg of soil of exchangeable potassium were determined. For the processing of post-harvest remains of winter barley, the indicators were slightly lower – 10.5, respectively; 51.5 and 251.0 mg/ kg of soil. The practical value of the research lies in the improvement of the processes associated with increasing the fertility of the soils of southern Ukraine due to the much more rational use of post-harvest remains of winter wheat and barley | Щорічно в Україні відбувається зниження показників родючості ґрунтів. Тому, для забезпечення бездефіцитного балансу ґрунту необхідно залучати додаткові резерви органічної сировини, зокрема післяжнивні рештки сільськогосподарських культур, а для їх деструктиризації використовувати біопрепарати. На сьогодні ще не зовсім повно вивчено дію біодеструторів стерні на процеси мінералізації післяжнивних решток рослин, особливо за різних способів основного обробітку ґрунту, тому метою нашого дослідження було визначити вплив деструктора Екостерн Класичний та способу основного обробітку ґрунту на його поживний режим в умовах півдня України. Методи досліджень: польовий, лабораторний. Дослідженнями встановлено кількість нітратів, рухомого фосфору та обмінного калію, що залишилася в середньому за роки досліджень у ґрунті дослідної ділянки після збирання пшениці озимої склала відповідно 6,3; 47,5 та 208,8 мг/кг ґрунту, а після збирання ячменю озимого – 5,9; 42,8 та 202,4 мг/кг ґрунту. Після часткової мінералізації рослинних решток озимих культур, за три місяці, вміст елементів живлення у ґрунті зростав, особливо за обробки біодеструктором Екостерн Класичний. Визначено, що застосування оранки сприяло пришвидшенню мінералізації рослинних решток пшениці озимої та більшому нагромадженню у ґрунті елементів живлення. Так, за обробки післяжнивних решток пшениці озимої біодеструктором за використання оранки у ґрунті було визначено 11,3 мг/кг ґрунту нітратів, 53,9 мг/кг ґрунту рухомого фосфору та 261,8 мг/кг ґрунту – обмінного калію. За обробки післяжнивних решток ячменю озимого показники були дещо меншими – відповідно 10,5; 51,5 та 251,0 мг/кг ґрунту. Практична цінність досліджень полягає у вдосконаленні процесів, пов’язаних із підвищенням родючості ґрунтів півдня України за рахунок значно раціональнішого використання післяжнивних решток пшениці та ячменю озимих форм
