Dry matter, carbohydrates and lipids in some edible mushrooms in Toplice country [Yugoslavia]

Chemical composition of 2 mushroom species which grow well in the Toplice region (Yugoslavia) has been investigated. The content of dry matter in the productive parts of Boletus edulis var. edulis varied from 10.69% to 10.83%, in Boletus edulis var. aereus from 11.99% to 12.28% and in Cantharellus cibarius var. pallescens from 8.17% to 8.87%. The content of lipids with B. edulis var. edulis was 5.96%, with B. edulis var. aereus 6.36% and with C. cibarius it was 8.24%. The investigated mushrooms contained relatively small quantities of mostly bound acids which increased with mushroom ageing and long term storage after picking. The cellulose content varied from 7.25 to 9.50% in dry matter sugars from 34.1% to 51.6%.
