The use of regression functions for quantification of substitution effects in food products

A mathematical-statistical analysis of substitution is presented for some kinds of food products of plant and animal origin. Substitution of food products is quantified by means of regression functions which are neatly arranged in the so called substitution matrix. Market (simulated) database and nonmarket database were used for computations. From these databases it is possible to derive substitution effects in the given kinds of food products.
