A report of evaluation of quality of wheat varieties in China

Authors analysed the present situation of wheat quality on the basis of determined findings of grain characters and their milling quality, physical and chemical properties of flour, rheological properties of dough, and breedmating quality of 98 wheat varieties selected on the basis of quality from 17 regions in China.
