In this study, a mathematical model and a calculation method have been presented for the description of drying processes in meat products. The chosen model is Fick's 2nd law describing the moisture distribution at a diffusion process. The differential equation has been solved by the finite difference method taking into account the initial moisture content of the product (as starting condition) and the vapor transport by the streaming dry air (as boundary condition)
