Kapulaga sebagai penghasil minyak atsiri mengalami proses desorpsi sebelum diproses lebih lanjut. Penelitian ini bertujuan untuk menentukan kadar air keseimbangan dan koefisien pengeringan kapulaga, mencari dan mempelajari bentuk model matematik desorpsi isotermi dalam hubungannya dengan pengertian serta mempelajari sifat mutu minyaknya. Kapulaga kering (k.a. 10 persen bb) memiliki rendemen minyak sebesar 3.88-7.02 persen dan komponen utama minyak kapulaga ini adalah 1.8-sineol yang besarnya berkisar 72.01-79.41 persen
