Black currants are widely grown berries in the gardens of Latvia. However they are little used in food production industry because of a high citric acid content in them. The berries and the products made of them are usually sour. The task of the present investigation was to study the problem of using black currants together with other berries and fruits to vary and regulate the citric acid content in the final product and to get a pleasant taste. General examples of berry and fruit combinations are described. They could be recommended for commercial production.
