[Use of probiotic bacteria enriched with selenium in functional foods]

A probiotic culture of Enterococcus faecium M-74 enriched with organic selenium is used for the production of a new functional food. This modified ewe cheese called FORTE BRYNDZA NATURAL, produced by the Slovak University of Komensky and the company NIKA, was presented to the public for the first time in May 2000. In addition to the positive effect of the probiotic culture, this new product is a good source of selenium, as this element is deficient in the nutrition of the Slovak population.
