Physico-chemical and microbiological characteristics of goats' milk in Lithuania

The physico-chemical and microbiological characteristics of goats' milk produced in Lithuania were studied. Protein content in goats' milk varied from 2.7 to 4.2%; the fat content ranged from 2.7 to 5.4%; the density - from 1026 to 1033 kg/m**3, and the acidity - from 14 to 22 deg T. The influence of lactation period on the acidity and protein content was determined.
