In chocolate and chocolate-like products cocoa butter has been used and alternative fats too. These fats are based on vegetable fats and oils, produced by different technological processes. A lot of tailor made products with different names can be found at the market. The main quality parameter of final products are physical properties of fat which also affects a host of parameters during processing.
