Storage globulin and aspartic proteinase from ungerminated cacao seeds: kinetics and mechanism of in vitro proteolysis

Purification of aspartic proteinase (CAP) and 7S globulin from ungerminated cacao seeds was carried out in this investigation. The action of pure CAP on native 7S globulin was followed. Mixed-type limited and unlimited (cooperative) proteolyses occurring in parallel was observed and its kinetics was described according to an approach developed earlier.
