Fats in nutrition are not only the source of energy and soluble vitamins but also the irreplaceable nutritive component as the source of fatty acids necessary for growth and development of living organisms. The aim of this work is to present some basic information on fatty acids in general and their importance in human nutrition to point to possible use of omega-3 fatty acids in the production of biologically valuable food products for human nutrition.
