DEUTSCH: 19 Salatsorten zeigten signifikante Unterschiede im Nitratgehalt, waehrend der osmotische Wert im Presssaft nur wenig schwankte. Der NO3-Gehalt war negativ mit den Konzentrationen an Glucose, Fructose, Cl und Malat korreliert. Fuer die Zuechtung nitratarmer Sorten koennen bei der Selektion die Gehalte an organischen Saeuren, Zucker und Chlorid verwendet werden.
