ITALIANO: [Il nostro scopo e' stato di adattare la tecnica Apostolatos alla determinazione dell'azoto nei cereali. I campioni venivano mineralizzati con digestione acida determinando l'ammonio risultante mediante la reazione di Berthelot. Sono state stabilite le condizioni ottimali per la reazione e sono stati introdotti cambiamenti per regolare l'intervallo di pH. I risultati mostrano che questa tecnica costituisce una risposta sensibile, veloce e affidabile per valutare le proteine nel lavoro di miglioramento dei cereali].

Samples were mineralized by acid digestion determining the ammonium resulting by the reaction of Bethelot. The optimum conditions for a reaction were established and changes were introduced to regulate the range of pH. The results show that this technique constitutes a sensible, fast and reliable answer to value protein existing in cereal improvement.
