anglais. Chemical, textural, sensorial properties, NOMb percentage, residual nitrite and the oxidation level of the products which were produced by reduced nitrite level and tomato powder. Frankfurters were produced by addition of 150, 100 and 50 ppm nitrite and 0%, 2% and 4% tomato powder.

Gerçekleştirilen çalışmada, nitrit oranı düşürülerek ve domates tozu katılarak üretilen sosislerin kimyasal, tekstürel, duyusal özellikleri, üründeki nitrosomyoglobin dönüşümü, kalıntı nitrit miktarı ve oksidasyon derecesi incelenmiştir. Ürünlerin üretiminde 150, 100 ve 50 ppm olmak üzere 3 farklı nitrit miktarı ve her üründe %0, %2 ve %4 oranında domates tozu eklenmiş ancak kontrol grubu dışındaki ürünlere boya maddesi eklenmemiştir.
