A dry process for the production of starch and protein fractions from legumes [cowpea and mungbean] and cereals [rice and sorghum; study conducted in the Philippines]

Cowpea, mungbean, rice and sorghum were fine ground and air-classified resulting into two fractions: the fine fraction which was high in protein and the coarse fraction which was high in starch. Responses to air-classification were better with legumes than with cereals. Protein content of legume fine fractions were 100-150% higher than that of the unclassified materials. In cereals, the increase was about 55-70%. This difference in response to air-classification has been attributed to factors like cut-size point, size and geometry of the starch granule, and degree of protein-starch agglomerations. A financial study showed that the process offers attractive return on investment
