The material investigated consisted of raw quince, lemon, orange and grapefruit juices. Determination of the content of total extract, simple and total sugars, total acids, pH as well as of the total nitrogen, pectines, L-ascorbic acid, beta-carotene, thiamin, phenolic compounds, calcium, potassium, sodium, magnesium and iron content was carried out
