anglais. The effect of process temperature on the degree of phase separation of palm oil has been studied. At high temperatures the density of the solid phase increased leading to high volume ratios of liquid to solid phases. This is a result of the low entrainment of liquid oil in the liquid phase. This influence of the temperature on the morphology of the oil crystals can be manipulated to obtain oil varying quality

Alle alte temperature la densita' della frazione solida aumenta e cio' conduce ad alti rapporti fra la fase liquida e la fase solida. Il fenomeno e' dovuto alla bassa ritenzione di olio nella fase solida. Questa influenza della temperatura sulla morfologia dei cristalli dell'olio puo' essere guidata per ottenere oli di qualita' variabili
