Comparison between plate count agar and milk plate count agar in evaluation of total bacterial charge in pasteurized milk [Italy]

The Authors performed a total aerobic mesophilic bacteriological count in 135 samples of different kind of pasteurized milk (whole milk, high quality whole milk, whole milk immediately after pasteurization process and partially skimmed milk). The method of the past Italian law (OM 11.10.1978) that included the use of the nutrient broth and the plate count agar was compared with the method of the actual law (OM 26.3.1992) that considered the use of the peptone saline broth and the milk plate count agar. In fact the method of the OM 26.3.1992 shows significantly higher bacteriological count (P0.01) with 45% UFC/ml more than the other

E' stato effettuato il conteggio della carica batterica totale aerobia mesofila in 135 campioni di latte pastorizzato di vario tipo (intero, intero alta qualita', intero all'uscita del pastorizzatore e semimagro). La ricerca e' stata condotta confrontando il metodo indicato dalla precedente normativa italiana (O.M. 11.10.1978) che prevede l'utilizzo di brodo nutriente e plate count agar con quello suggerito dalla normativa attuale (O.M. 26.3.1992) che contempla l'adozione di una soluzione salina/peptone e milk plate count agar. I nostri risultati dimostrano che il metodo attuale permette di evidenziare cariche batteriche significativamente piu' elevate (P0.01), isolando il 45% in piu' di UFC/ml rispetto al precedente
