Topics covered are: economy cuts of meats; making elegant meals from economy cuts; roasts from less costly cuts of beef, lamb, pork, veal and poultry; thrifty 30 minute meals; soups and stews; and casseroles and meat pies. Colorful photographs illustrate the recipes and some cooking techniques.
