The benefits of flexible packaging and its drawbacks are described. Food can be processed in a fraction of the time it takes in a metal can, and the foods remain shelf stable without refrigeration for up to five years. Short processing prevents thermal deterioration, carmelization of starches and sugars, destruction of nutrients and saves energy. It is expensive, however, and flex cans are being used mainly for specialty items which tempt consumers to indulge frequently in high calorie foods.
