This is a discussion of the foods of the Americas, with an emphasis on the origins of corn and potato, as well as a look at the true beginnings of fusion cuisine. The article is based on the research and exhibition script for the Quincentenary exhibition, “Seeds of Change,” at the National Museum of Natural History, Smithsonian Institution.
