The health benefits and risks of canned tuna are outlined in this article. Contamination from a variety of sources, especially mercury are covered. The differences in nutrient content, flavor and appearance of white, light and diet tuna products are summarized. A chart presents a sensory evaluation of over 40 canned tuna varieties. The article features a brief description of the tuna industry.
