Preservation of fresh dates (Rutab) using potassium sorbate

Samples of fresh Zahdi dates dipped in 0.5, 2, 5% solution potassium sorbate for 1,2 and 3 minutes and others sprayed with potassium sorbate for 15, 30 and 45 seconds were stored at room and refrigerator temperature. The 5% Potassium sorbate did not prevent microbial growth on the stored dates at room temperature (25-32 deg C). The results also indicated that the dipping treatment was more efficient than spraying
