A contribution to the technology of parsley drying

In this paper the test results are presented regarding the process of parsley rosette (herba) drying in a three-canal chamber tobacco dryer (type SDM-N 105) produced by the "Universal" from Podravska Slatina (Yugoslavia). During the drying process the changes in the leaves --stalk (stem) ratio were controlled for the wet and dry mass, and the changes of exploitative parameters of the drying process and of the quality of drying were considered. On the base of results obtained it can be concluded that the parsley rosette (herba) shows the similar reactions during the process of drying as do the medical plants (for example: mint).
