A factor analysis on the development process of dry shiitake mushroom [Lentinus edodes] farming in Japan

The main purpose of this study are: 1) to elucidate the exogenous factors which increase demand and supply for dry shiitake mushroom; and 2) to elucidate the endogenous factors on the development process of dry shiitake mushroom farming. As the results of this analysis, the factors which increase demand for dry shiitake mushroom were i) foreign demand for it; and ii) consumption per head of it in Japan. Domestic demand in Hong Kong had a great effect on foreign demand. The domestic demand was influenced by gross domestic product (GDP) in Hong Kong. Consumption per head of dry shiitake mushroom was influenced by income per head and by "real" retail price after discounting rising consumer prices. The factors which increase supply are i) low price of bedlogs in the 1960's; ii) simplification of drying technique; and iii) repletion of institutional financing for equipment investment. The endogenous factors are i) introduction of heating power driers and labor-saving machinery; and ii) formation of farmers' organizations at the trade level
