Elimination of salmonella and reduction of bacteria in frozen shrimp by radiation treatment

Effect of irradiation on Salmonella viability in view of their elimination in frozen shrimp was investigated by using serotypes that are commonly found in shrimp. The bacteriological properties of irradiated frozen shrimp were also evaluated. A difference in radiation resistance was noted among five Salmonella serotypes tested. S. Lexington was the most resistant and S. anatum was the least resistant. Salmonella resistance was higher in frozen contaminated shrimp than in refrigerated contaminated shrimp. A dose of at least 4.2 kGy is required for a seven log cycle reduction of Salmonella contamination in frozen shrimp. Treatment of frozen shrimp at 3 kGy was adequate for a radicidation process. The product was essentially free from naturally contaminating Enterobacteriaceae, Salmonella, and other organisms of public-health significance. With proper storage at -18 deg.celsius a further reduction in Salmonella might be expected.
