This paper describes a method for maintaining the freshness of melons. The freezing temperature of melons is influenced by the harvest stage as well as the region in the melon. The highest freezing temperature was indicated at the top of melons harvested in early stage. After studying freezing temperature, the authors determined that a temperature of -0.5 degrees C was ideal for storage. As for the storage conditions, experiments were performed on unpackaged melons and wrapped melons in 0.03 mm thickness polyethylen film with needle-eye holes. From the results of sensory tests, it was found that film with 2 needle-eyes was the best for maintaining freshness over a marketing period of 30 days. It was concluded that the overall scores of sensory tests were influenced by sweetness and aroma of the melons
