[Research on the biological value of wild animal meat]

In the research carried out at the LUA the content of mineral substances in wild animal meat and that of ferment lysozyme in muscle tissue were checked. It has been stated that the mineral content depends on the locality of animal living, i.e. on soil and feed peculiarities. Wild animals meat is richer in minerals in comparison with that of domestic animals. Checking the lysozyme content showed a low fermental activity and dependence on permanent blood plasma amount in muscle tissue, as well as on the way the animal was killed.
