"Lisnati" cheese

"Lisnati" (aminated) cheese is a type of plastic curd (spun, stretched curd) cheese (pasta filata) originated from farm household manufacture in the Vojvodina Province, Serbia (Yugoslavia) since the late 1970s. The "Lisnati" cheese became very popular on the local farmers markets. The four manufacturing methods of "Lisnati" cheese used in the farm household production were discussed in the paper. The method including the blend of two third fresh milk and one third spontaneously prefermented sour milk was examinated in detail. It was found that the best cheese quality regarding to stretchability, flowability and melt time was when the cheese milk blend had acidity degree from 16-17 degrees SH and pH value from 5.5 to 5.6.
