Application of tristimulus photoelectric colorimeter for defining white sugar color in solution

The Yugoslav standards prescribe the methods for the determination of sugar color both in solution and in the mass. For defining the sugar color in solution, a method based on the measurement of absorbance on the spectrophotometer under defined conditions is used. The possibility of using tristimulus photoelectric colorimeter MOM Color 100 (MOM - Budapest) for a more exact determination of sugar color has been examined in this paper. This instrument measures data for calculating color criteria according to CIE-normal and CIELAB system and Taubees whiteness numbers (W(TA)) in sugar samples mutually differing in color. Color indices determined by tristimulus photoelectric colorimeter in sugar solution have shown good agreement with color obtained by official method.
