Antioxidant activity and fatty acid constituents in durian seeds

Antioxidant activity and fatty acid constituents of durian seeds were studied. Different polarities of solvents, i.e. methanol, chloroform, and hexane were used to extract the antioxidant from endosperm of durian seeds. It was found that only methanol extract showed the strong antioxidant activity, which was evaluated by thiobarbituric acid reactive substance formation method, and that 6.7 micro g/g oil could effectively inhibit lipid oxidation in this experiment. The antioxidant activity of the extract was stable at rather high temperature of 60 deg C for 12 day-prolonged incubation. Phenolic compound may be responsible for the antioxidant activity in durian seeds and complete elucidation of the active compound is in progress. The yield of crude lipid was 0.18 percent and the main fraction of it was triglyceride with the fatty acid constituents of 41.2 percent palmitic acid, 19.2 percent stearic acid, 27.7 percent oleic acid, and 9.8 percent linoleic acid.
