This study evaluated the microbial risk in 86 samples of meals destined to the first infancy, produced using two different foodservice systems: fresh-warm, currently used in Italy, and refrigerated one (cook and chill), experimentally carried out. The results of the microbial tests showed no differences between the two systems and a general good hygienic-sanitary quality of all kinds of meals
