Extrusion of corn semolina using a single screw extruder Brabender 20DN was carried out. Diafiltration whey concentrate to moisten the semolina from initial to suitable for extrusion moisture was used. The effect of quantity of concentrate added, screw revolution and temperature in second zone of extruder on the density and the radial expansion index of extrudates was investigated using a full factorial experiment.
