Production of persistant dry Pecenica in industrial conditions in Macedonia

Dry permanent pecenica belongs to a group of dry-cured products. In the Republic of Macedonia is produced in industrial conditions. Ripening (drying) of products is made in special air chamber where the ripening done under controlled conditions. The paper presents data on testing the relative humidity, air temperatures during the ripening processes (drying). Is fixed and changes in weight of roast (weight loss). After that the chemical composition, sensory characteristics and bacteriological picture of the finished product were investigated.
