Brewer's yeast as a potential source of phospholipids.

Prospects for obtaining phospholipids from brewer's yeast have been examined. Total lipids and phospholipids content were determined and phospholipids fractions were separated. Similarly to other yeast species brewer's yeast produced only ordinary phospholipids. Major detected phospholipids are phosphatidylcholine, phosphatidylethanolamine and phosphatidylinositol. The predominant fatty acid in phospholipids is palmitoleic acid.
