It has been found that the technological value of triticale was influenced, first of all, by the location, year of harvest, interactions of locations with weather conditions in specific years and then by genetically conditioned traits of the studied varieties. The bread volume and an overbake of bread were correlated with a total protein content and sedimentation tests.
