Field testing a fifth-grade nutrition education program designed to change food-selection behavior.

A study assessed the effectiveness of a materials-based, teacher-adminstered nutrition education program for improving food selection behavior and nutrition knowledge in 5th-grade children attending school in California, Oregon, and Britsh Columbia. The results indicated that the program gave substantial improvement both in student food choices and nutrition knowledge in all 3 regions, as judged by improvements in post-test scores. A 6-8 week follow-up revealed that the improvement in food choices was maintained.
