Effect of hot air temperature on drying kinetics of golden berry

Drying kinetics of golden berry was investigated at different hot air temperature ranged from 40 to 70�C. The experimental curves of drying were adjusted to the diffusional model of Fick for an infinite slab and the moisture effective diffusivity was calculated. Effective diffusivity increased with increasing drying temperature. An Arrhenius relation with an activation energy value of 51.31kJ/mol expressed the effect of temperature on the diffusivity. Three different mathematical models available in the literature were fitted to the experimental data. Among the considered mathematical drying models, Page model, was found to be more suitable for predicting drying of golden berry.
