The impact on the Australian lamb industry of growing more Elite lamb [meat industry]

Elite lamb is a larger (22 kg) carcase with a lower (2) fat score than the typical Australian lamb product. The objective of the Elite lamb project is to increase the production of this type of lamb and decrease the volume of the traditional product. Differences in the processing costs of the two products are not well documented, though it is expected that the larger carcase would be less costly to process. Research undertaken to estimate the benefits and costs of the changes to producers, processors and consumers which may follow if the proportion of Elite lamb on the market were increased is reported here. Included is a model of the industry, relationships between production, production costs and consumer valuation, and values of market parameters used in the analysis.
