Английский. Since ewe's milk is essentially transformed to cheese, it's very important to evaluate with accuracy proteic N content and to consider casein content versus whey proteins. We evaluated the accuracy of measurement of true protein (Proteic N x 6.38) versus crude protein using infrared analyzer MILKOSCAN 133B. A method to determine quantitatively casein and whey protein content by isoelectric focusing and scanning densitometer has been considered

Diventa quindi particolarmente importante determinare con accuratezza il contenuto in azoto proteico e poter valutare il rapporto quantitativo tra caseine e sieroproteine. Nel presente lavoro viene stimata l'accuratezza della determinazione della proteina vera (N Proteico x 6.38) rispetto alla proteina totale mediante analisi infrarosso con apparecchiatura MILKOSCAN 133B. Viene inoltre preso in esame un metodo per la determinazione quantitativa delle caseine e delle sieroproteine mediante separazione per focalizzazione isoelettrica e lettura densitometrica
