Английский. An improvement of the gas chromatographic method by Muntoni for the determination of the number of eggs used in the production of egg-containing pasta is described. The method uses HRGC or HPLC to evaluate the ratio cholesterol/beta-sitosterol, is relatively accurate and, above all, quite fast as the amount of sterols is determined directly from the fatty material previously transesterified

Viene presentato un miglioramento al metodo gascromatografico di Muntoni per la determinazione del numero delle uova utilizzate nella produzione di paste all'uovo. La metodica proposta prevede la valutazione, a mezzo HRGC o HPLC, del rapporto colesterolo/beta-sitosterolo ed e' caratterizzata da un'accettabile accuratezza e, soprattutto, da un contenuto tempo di analisi in quanto gli steroli sono determinati direttamente sulla sostanza grassa, previa sua transesterificazione
